At $5.35/lb (hanging weight), this is a cost-effective way to get 100% grass-fed beef. Pick it up at our farm or have it delivered to your home all at once or quarterly. The standard quarter cow is perfect for those who would like a quarter, but don’t have someone to share a half of animal with.
The standard quarter cow comes with the following cuts:
Ground beef (1 pound packages)
Bones (3 lbs per package)
Short Ribs
Half trimmed-brisket
Soup bones
Rib steaks (bone-in)
Bone-in chuck roast (3 to 4 lbs per roast)
Boneless chuck steaks (combination of Ranch, Flat Iron, Chuck Eye, and Denver)
Flank steak or Tri-Trip
T-bone and Porterhouse steaks
Sirloin steaks (bone-in)
Shaved steak (from Bottom Round – great for stir fry, cheese-steaks, pizza, etc.)
Sirloin tip roast (3 to 4 lbs per roast)
A quarter cow is great for a small family or an individual that eats a lot of beef. You can expect to take home between 70 and 90 pounds of meat and bones.
The total cost is based on the weight of the cow as recorded by the butcher, plus the butchering costs. The hanging weight (HW) is the weight of the animal when it is ready to be butchered. Depending on how you have it butchered, the take-home weight will be 60-70% of the hanging weight, including the weight of bones but not fat.
A typical hanging weight for a quarter cow is between 125 and 150 lbs, and the butchering costs average out to about $1.40/lb HW. You also have the option of picking up at the farm or having it delivered (with an additional delivery fee). So you can expect a total cost between $830 and $1,000.
